Carrot Soup

Ingredients

2 tbsp olive oil4 cups chicken broth2.5lbs carrots3 cloves of garlic2 medium onions6 tsp brown sugarsalt and pepper to taste
In a large heave soup pan heat the butter over medium heat. Add the onions and garlic and saute until translucent, about 5 minutes.
Cut the carrots into 1 inch segments and add to the pot with the stock.
Bring to a gentle boil, then lower the heat and simmer for 30-40 minutes until carrots are soft and tender.
Remove from heat and add the brown sugar.
Let the soup cool for 10 minutes and then puree in a blender.
