Herb and Mustard Crusted Salmon

Ingredients
1 cup fresh italian parsley1 cup fresh cilantro leaves3 scallions3 tsp olive oil1 tbsp dijon mustardjuice of 1/2 lemon1 1/2 lb salmonsalt and pepper
Directions
Preheat oven to 450F. Chop together cilatro, parsley and scallions. Combine well. In a small bowl, whisk together 2 tsp of olive oil, mustard and lemon juice.

Sprinkle Salmon on both sides with salt and pepper. Brush oilve oil mixture on both sides then roll salmon in the chopped herbs.

Place remaining 1 tsp olive oil in pan. Place salmon in pan. Sear each side for 3-4 minutes. Then place entire skillet in oven, roast for about 5 minutes or until done.
