Introduction

Number of Servings: 4

Ingredients

    2 12-ounces bag frozen peas, about 5 cups
    2 garlic cloves, sliced in half
    1 1/2 cups vegetable stock, no salt added
    2/3 bunch flat-leaf parsley, leaves only, about 1 1/2 cups
    2 tablespoons lemon juice
    8 mint leaves OR 1 t fresh dill

Directions

Place the peas, garlic, and stock in a medium size saucepan over high heat. Bring to a boil and cook for two minutes. Remove from heat and add the parsley, lemon juice and mint. Puree in a blender or using an immersion blender.

Serving Size: makes 4 servings, 1/2 cup each

    Real Mushy peas are made with whole dried Green peas, soaked and cooked. Mash them gently when they are cooked. We eat them sprinkled with MALT Vinegar. - 3/2/15

    Incredible!
    Wonderful with seared scallops with Penzey fox point seasoning. Added to this recipe by using 4.5 ounce leeks sauted in broth till soft, added 1/2 teaspoon dried thyme and mint & 1/4 salt, then add peas broth and cook 3 mins, drained but kept broth-used 1/2 cup to puree -didn't want too thin. A++ - 1/31/21
