7 Layer Salad

4 cups romain lettucesalt & pepper to taste6 oz can early peas1 cup shredded carrots2 hard boiled eggs (diced)6 slices low sodium bacon1 cup shredded cheddar cheese2 spring onion stems sliced small3/4 cup light mayo2 tsp dill weed2 tsp lemon juice
In a dish bowl add the first 8 ingredients in the order they appear on the ingredients list with the exception to use only 1/2 cup shredded cheese. In a separate bowl mix the mayo, lemon juice, and dill weed to taste. With a spatula smooth the dressing mix on top of the dish. Sprinkle the remaining 1/2 cup shredded cheese on top of dressing. Cover with plastic wrap and chill for 2-24 hours.
To server use a large serving spoon, mixing it per serving. Don't mix entire bowl because all might not be eaten at the event. You can eat the rest later, keeping the salad unmixed until ready to eat keeps things crisp and unsoggy.
6-8 Servings.
