Ingredients
*Oatmeal (Old-Fashioned Quaker Oats), 1 cup*1% buttermilk-1 cup, 1 serving*Domino Dark Brown Sugar (baking serving=1 cup), 1 cup*1 large egg (per the egg board), 1 serving*100% Natural Vegetable Oil (Cub Foods) [14g], 4 tbsp*King Arthur Flour Unbleached All-Purpose Flour, 1 cup*Salt, Redmond Real Salt Sea Salt (1/4 tsp.), 2 serving*Baking Powder, 1 tsp *Arm & Hammer Baking Soda, .5 tsp Cranberries, dried, sweetened (craisins), .5 cup
Directions
Preheat oven to 375. Pour buttermilk over rolled oats in a med sized bowl. If other than quick-cooking kind is used, let stand 15-20 mins. Add sugar, egg and oil. Beat Well. Sift flour, salt, baking powder and baking soda. Blend with oat mixture. fold in blueberries, raisins, or craisins. Spoon into greased or paper-lined muffin cups. Bake until golden - about 30 minutes. Makes 1 doz large muffins or appx 36 mini-muffins.
