Grandma Bette's Gluten Free Banana Bread

Ingredients
1 cup white rice flour1/4 cup buckwheat flour1/4 cup corn starch1/4 cup potato flour1 tbsp teff flour1 tbsp baking powder1/2 tsp salt1/2 cup cooking oil1/2 cup sugar2 eggs1 cup mashed banana (about 2 med size)
Directions
mix dry ingredients (first 7) and set aside
then in large bowl put cooking oil and sugar and beat together. Add eggs and beat until smooth. Add mashed banana and beat again.
Then add dry ingredients and stir in just until all dry is moist

Put in bread loaf pan (9in X 5in)
and bake at 375 degrees for 50 minutes

makes about 18 half inch slices
