Ingredients
16 Bell Peppers2 pkgs ground turkey - ground chicken reduces calories per serving. (nutrtional info based on 20.8 oz 93%, 20.8 oz 99% ground turkey)1 can 28 oz. diced tomatoes2 cans 8 oz. tomato sauce5 - 8 cups (approx) brown rice, cooked (calories based on 7 cups)2 packets Sazon seasoning4 tsp. Adobo seasoning2 cups reduced fat 4-cheese blend, shredded or less is trying to reduce calories
Directions
1) Start cooking brown rice
2) Preheat oven to 350 F
3) Cut top of peppers off to make "bowl" for filling
4) Boil peppers for 10 minutes (may need to do 2 batches)
5) Brown ground turkey while peppers and rice is cooking.
6) Add tomatoes, sauce, seasoning to ground turkey. Simmer.
7) Add cooked rice to ground turkey mix. Add half of cheese. Mix well.
8) Fill peppers and top with remaining cheese.
9) Bake for 5 minutes until cheese melts.

Makes 16 servings of 1 stuffed pepper each.

    They are found with the international foods/Mexican foods in our grocery store.
