Pork Stir Fry

Ingredients
1/2 LB Center Cut Boneless Pork Chops, sliced thin1 onion, sliced thin4 carrots, sliced thin1 bag Birds Eye Steam Fresh Premium Broccoli Florets2 Tbsp Kraft Roasted Red Pepper Italian Dressing1 Tbsp Soy Sauce2 Tbsp Apricot Preserves1 Tbsp EVOO1 Tbsp butter2 cups water1 cup uncooked brown rice (Uncle Bens quick cooking)
Directions
Measure 2 cups water, 1 cup uncooked brown rice and 1 Tbsp butter into saucepan. Bring to boil. Reduce to low, simmer until water is absorbed. Timing will depend on brand of rice. Uncle Ben's quick cooking rice will be ready in 25 minutes.

Slice the carrots, cover with water, bring to boil. Cook until tender, about 15 minutes.

Put the SteamFresh Broccoli in the microwave for 6 minutes.

Slice the onion. Break into rings. Saute in pan with 1 Tbsp Olive Oil.

Slice the pork. Add to the pan with the onions. When the pork is cooked through, add the cooked carrots and the cooked broccoli. Break up the broccoli into smaller pieces as you stir. Add in the Kraft Roasted Red Pepper Italian Dressing (or any italian dressing), the soy sauce, and the apricot preserves. Stir to coat as the mixtures simmers. When all is heated through, serve with the rice.

One serving = 3/4 cup of cooked rice and 3/4 cup of stir fry. Made 5 servings.
