Breakfast Muffin

Ingredients
3 ea Eggs1 cup Heavy Whipping Cream1 cup Spinach, chiffinade.5 cup Bacon Bits1 cup Cheddar Cheese, shredded
Directions
1. Preheat iven to 375.
2. Spray 5 muffin cups with cooking spray.
3. Beat eggs and heavy cream together. Add spinach, bacon bits and cheese.
4. Season with pepper (the bacon bits provide enough salt).
5. Spoon mixture into muffin cups, distributing evenly. Fill the empty cups with about 3 tbsp water each.
6. Bake 20 minutes, or until golden brown, "puffed", and cooked through.
7. Let cool completely, then refrigerate. Can be reheated throughout the week in the microwave for 25 seconds.
