blueberry cottage cheese oatmeal pancakes

Ingredients

2 eggs.5 c cottage cheese.5 tsp baking powder.5 tsp vanilla extract2 tsp sugar.5 c oats
in a blender, puree 2 eggs, half c cottage cheese, .5 tsp baking powder, vanilla, and sugar.
add oat, just mixing. batter should still be lumpy.
fold in blueberries
On a griddle, spray no stick spray and heat to 350
Spoon batter into 6 pancakes
cook approx 3 minutes each side.
serve with topping of your choice, but they are good without any toppings!

Wow-oh- Wow! I have never tried oatmeal pancakes, to eat or make. I do not to need look any further than the very first one I tried! I cut the recipe in half, and used whipped cottage cheese, added a !/2 scoop of vanilla protein powder. Thank you for sharing this wonderful recipe! - 8/19/18
