Spinach-Berry Salad

Ingredients
1/3 cup almonds, slivered4 cups baby spinach3/4 cup strawberries, quartered1 tablespoon balsamic vinegar1 teaspoon Dijon mustard1 teaspoon honey3 tablespoon extra virgin olive oil1 ounce soft goat cheeseSalt and pepper to taste
Directions
Place the almonds in a dry skillet or saute pan. Cook over low heat, shaking the pan the entire time until the almonds are toasting. The almonds are done when you start to smell a "nutty" scent.

Remove almonds from the pan to cool. (Do not cool in the skillet because they will burn from the heat that remains in the pan.)

Prepare the dressing by placing the vinegar, mustard, and honey in a mixing bowl. Slowly whisk in the oil.

Place the spinach in a large bowl. Add the strawberries, almonds, and dressing. Toss to coat. Top with goat cheese. If desired, season with a pinch of salt and pepper.

Serve immediately. 1 1/4 cups per serving

    I love this. I use the maple grove strawberry balsmic dressing (it is low cal) So even when strawberries are out of season, I use some grilled chicken with the strawberry dressing - 11/5/09

    I am too lazy to mix my own dressing. I use fat-free poppyseed dressing or Ken's Healthy Options Sweet Vidalia. It is also not necessary to toast the almonds--I prefer them anemic. Also when strawberries are out ot season, dried cranberries (craisens) are a good substitute. - 11/5/09

    I have NOT tried this recipe but I have the same one using mandarin oranges in place of the strawberries. It is a family favorite. Thought others might like to try that version as well. - 1/31/10

    Good combination of veggies and fruit but thought the dressing was way too oily. I will make this again but will use a Kraft light dressing of some kind instead. - 8/4/09

    I've been making a similar salad for ages, but I only use the balsamic vinegar for dressing, no oil etc, it cuts down the fat calories and it's good without the oil. I've also used blueberries, pears or oranges if I didn't have strawberries. They're all good. - 2/3/10

    I love all of the ingredients in this! I doubled the recipe and really cut down the amount of oil, only used about 2 Tbs for double the dressing. I used more of a really high quality balsamic to make up for it. Would use less dijon next time, tasted to mustardy to me, everyone else loved it! - 5/1/10

    The dressing is super yummy but a bit too oily. I'm going to try it with less oil next time. Also, the salad is great with blackberries and pecans instead of strawberries and almonds. - 1/6/10

    Delicious! I had to make a couple of substitutions for the dressing since I didn't have honey or dijon mustard on hand. I used a pinch of sugar and mango-curry mustard. Still came out wonderful. Even my picky 11-year-old liked it. I added to my cookbook and will definitely make again! - 11/24/09

    I have had a similar salad before and it was delicious. I will probably add cucumbers, shredded carrots and some cherry/grape tomatoes to make it more filling and get more veggies in.
