Tamy's Oatmeal Pumpkin Muffins

Ingredients
1 Cup old fashioned rolled oats (not instant)1 cup non fat milk1 cup whole wheat flour1/2 cup brown sugar1/2 cup canned pumpkin1 egg (or 2 egg whites)1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1 tsp cinnamon1/2 tsp pumpkin pie spice1 tsp granulated sugar1/2 cup raisins
Directions
Soak the oats in the milk for approximately 1 hour. Add all the dry ingredients into a bowl and whisk together. Add pumpkin and egg to the oatmeal mix and whisk together. Take wet ingredients and stir them into the dry ingredients making sure not to stir too much or muffins will be tough. Take raisins or dried fruit or any other goodies you want to add and fold them into the batter. Spoon into paper lined (or greased) muffin tin filling about 2/3 full. Bake in a preheated oven @400* for approximately 15 minutes or until toothpick inserted in center comes clean. Makes 12 muffins.
