cake: vegan cherry cobbler

* rapadura, 48 tsp (remove) * frozen cherries, 5 cup (remove) * Water, tap, 2 cup (8 fl oz) (remove) * homemade vegan all purpose baking mix, 2 cup (remove)
Preheat the oven to 350 degrees and oil the pan.
While the oven is preheating, mix the baking mix, rapadura, and water together. The mixture will look really, really runny! Don't be alarmed! If you're afraid it's too thing, though, add a teensy bit more baking mix....not even 1/4 cup, until it thickens up a bit. Just keep in mind it's going to be runnier than usual.
Once this is mixed, pour it into the pan. Pour the fruit and juices over top evenly.
Put in the oven and bake for about 40 minutes (mine took a little bit longer). The top should be a light golden color, and it will feel soft like it's going to give way when you touch it. This can be eaten right out of the oven.
