Cilantro Hummus

Ingredients
2 cloves garlic, minced (or 1 tsp garlic powder)3 c or 2 (15 oz) cans garbanzo beans, rinsed and drained6 tbsp lime juice4 tbsp light olive oil2 tsp chili paste or finely chopped, seeded jalapeno chili3/4 c fresh cilantro, chopped
Directions
In a food processor or blender, mix all ingredients until well blended. OK to put whole cilantro, stems included, into processor.
Makes 4 servings. Serve with pita.

    This is very tasty, tho next time I'll add more cilantro and jalapeno, for a stronger flavors. I used less olive oil (less fat) and added some water to help it blend (a Vitamix). I'll try a food processor next time. Great on toast for breakfast. - 3/17/11
