"Pizza" stir-fry

Ingredients
half a Tablespoon of olive oil1 Tablespoon of minced garlic4 slices of a large onion, diced4 slices of a large tomato, dicedhalf of a large pepper, cut to bite-size pieces4 medium mushrooms, diced2 Tablespoons of oreganohalf a Tablespoon of basil2 Trader Joe's turkey meatballs (optional)
Directions
Makes 1 serving (ingredients can be multiplied for multiple servings, of course)

Heat olive oil and garlic over medium heat in large skillet. When garlic begins to cook, add onion and cook until pieces become somewhat see-through. Add tomato and let cook.

If you're going to use the meatballs in this recipe, now is a good time to heat them in the microwave while tomato is cooking. Nuke for 4 to 5 minutes, remove, and dice into small pieces.

Add pepper and mushroom to skillet with garlic, onion, and tomato. Mix thoroughly and season with oregano and basil. Add diced meatball and mix again. Allow to simmer for a minute or two.

Turn off heat and transfer to plate. Eat and enjoy!
