Kale Salad

Ingredients
4 cups chopped kale (about 2 small bunches)4 cloves garlic, pressed or minced (canned minced doesn't work well)1/2 cup sesame oil1 tsp sesame seedsjuice of one lemon3/4 tsp salt
Directions
Chop or tear kale finely, being sure to discard center stem of each leaf. Combine other ingredients for dressing and pour over kale, mixing well.

Makes 8 half-cup servings.

*The salt is important to counteract the bite of the garlic -- don't leave it out.
