Baked Layered Tostada

Ingredients
Middle Layer:1 lb (16 oz) ground turkey, 93% lean1 medium onion, chopped (about 1/2 cup)1 envelope (1-1/4 oz) taco seasoning mix1 can (8 oz) tomato sauce1 can (16 oz) fat-free refried beans1 can (4 oz) chopped green chiles1/2 cup sliced ripe olivesBottom Layer: 1 cup Bisquick original baking mix1/2 cup yellow cornmeal1/4 cup 1% milk1 fresh egg2 tbsp Canola oilTop Layer:1 fresh egg1 cup reduced fat sour cream2 cups Kraft 2% cheddar cheese
Directions
Heat oven to 375 degrees. Grease 9-inch square baking dish (or rectangular that is about 12 x 7-1/2 x 2 inches). Spray with cooking spray like PAM.

Cook and stir ground turkey and onion until brown; drain.
Stir in seasoning mix, tomato sauce, beans, chiles and ripe olives. Set aside.

Mix baking mix (Bisquick), cornmeal, milk, beaten egg and oil until moistened; beat hard for about 30 seconds. Spread on the bottom of the dish.

Spread the turkey/bean mixture next over the above layer.

For the top layer, mix the egg, sour cream and cheddar cheese well, then spread on top.

Bake uncovered in preheated oven for 30 minutes until lightly browned like meringue. Let stand 10 minutes before cutting and serving.

    Thanks for trying this! I will use Heart Healthy Bisquick myself in the future. One more thing: These are quite large servings, and most of us would easily be satisfied with only one-TENTH of the recipe. We also won't be accused of putting our families on a diet, so it's a win-win menu. : )

    So yummy! Using sour cream and cheese with an egg is ingenious and its so creamy delicious. The only problem is the high fat count. - 8/17/09

    My old recipe called for high "everything" with grd beef, reg refried beans w/fat. You could try fat-free cheese and reduce portion size. Don't try to use FF sour cream mixed with the egg on the topping, however, because it doesn't hold up in the oven. Glad you enjoyed the recipe!

    This was delicious and very filling! I also froze some of the extra portions (wrapped up in foil and put in a freezer safe ziploc bag). I thawed them out a little, reheated in the oven, and it was just as good as before! - 8/6/09
