Shrimp Stuffed Salmon Patties

Ingredients
1 4oz can baby shrimp1/2 tsp garlic powder1 tsp dried parsleypepper to taste1 7oz can salmon2 scallions thinly sliced1 lg egg1/2 cup plain bread crumbs1/4 cup mayo (can use light)1 tsp. dill
Directions
Combine shrimp, garlic powder, parsley and pepper to taste. Set aside.

In another bowl, combine salmon, scallions, egg, bread crumbs, mayo, and dill.

Spray skillet with non-stick cooking spray. Take salmon mixture and divide evenly into 8 servings. Take the shrimp mixture and divide evenly into 4 servings. Take 1 serving of salmon, flatten, take 1 serving of the shrimp and layer on top of falttened salmon, take 1 more serving of salmon and layer on top of the shrimp. Make into a patty. Repeat 3 more times. Total 4 patties.

Put patties in warm skillet, cook on med for 4-5 min on each side.

Makes 4 servings.
