Parmesan Fries

Ingredients
4 large potatoes1/2 tbsp ground thyme1/2 tsp black pepper1 tbsp olive oil1/2 tsp salt1/4 cup grated parmesean cheese
Directions
Cut potatoes into fry like strips, and pat wedges dry with a paper towel.
Place in a bowl and toss with thyme and pepper, and drizzle with oil.
Place single layer on a baking sheet, and bake at 450 degrees for 30 minutes.
Sprinkle cheese and salt evenly over wedges.
Bake for another 10 minutes to brown.

    For better baked fries, soak raw, cut potatoes in warm water for 10 min. Spread on paper towels and pat dry. Season. Arrange on baking sheet, cover with foil, and bake in 475 preheated oven for 5 min, remove foil and continue to bake 20 min until bottoms are golden brown, rotate pan after 10 min. - 8/25/08

    These were so yummy! I skipped the oil and coated both the tray and the fries with Pam instead. When they were done, I spritzed a few times with butter spray for more flavor. I would definitely make these again. Yum! - 6/29/08

    Really good! Good hint from Lab-Lover - don't make them too thin. Also, I didn't use the oil at all - I sprayed "Pam" on the cookie sheet, and then sprayed over the top of the potatoes once they were laid out on the sheet. They still crisp up, and even less fat! - 6/24/08

    This is also good when you use sweet potatoes - more vitamins - you don't need to cook as long - we don't use the oil or salt just diff herbs and seasonings depending on how we feel that day. Good to do on the grill wrapped in foil on a hot day so you don't heat up the kitchen too!! - 10/22/08

    I have been making this for years. The only difference is I add 1/4 tsp Paprika to the salt and pepper. This has been a family favorite. - 10/21/08

    I've been making this for years so I know it's good! But you can cut down the oven time by boiling the cut fries first for a minute or 2. It's not a calorie-saver, just a time-saver if you're in a hurry, or a gas/electricity saver if you are pinching pennies. - 8/25/08

    It was okay. I made it in a ceramic dish and a regular oven safe dish and the ceramic was great, the other burnt the fries. Overall pretty good. My dad said it was better than frozen fries - 6/5/17

    To keep the potatoes from sticking to the sheet put parchment paper down. Will make them come up with no problems. - 5/15/17
