Chicken Fajitas

Ingredients
3 Chicken breast fillets (cut into strips)1 green pepper (cut into strips)1 red pepper (cut into strips1 onion (approximately 1 cup cut into strips)8 - 8" Flour TortillasMarinade:1 lime1/2 tsp salt1/2 tsp pepper1/2 tsp cumin1/2 tsp chili powder1/2 tsp cilantroToppings: (your choice)GuacamoleSour CreamSalsa CornShredded Cheddar CheeseChopped LettuceTomatoesRefried Beans
Directions
Mix together marinade ingredients. Add the chicken and marinate for minimum of 30 minutes to maximum of overnight)

Saute peppers in 1 Tbl of canola oil. Add onion slices. Remove peppers and onions when soft and set aside. Add chicken to pan (add more oil if necessary) Cook until almost done (approx 5 minutes and add peppers. Cook for a few minutes more and serve. While chicken is cooking, prepare the toppings in individual bowls for serving. Warm up tortillas in a tortilla warmer, or individually in the microwave on a paper towel for 15 seconds each. Place fajita mixture in the tortilla. Let each person add their own toppings and wrap tightly. Serves 8

    This is my first time ever making fajitas. The marinade for the chicken is phenomenal. I used two limes instead of one, so there was enough marinade for all three breasts to soak. I let them marinate for three hours. The chicken, peppers and onions had enough flavor, I didn't NEED other toppings. :) - 2/3/10

    As a former Weight Watcher Member you can cut the fat even more in this recipe by using non-stick spray for the chicken and a non-stick skillet. - 10/7/07

    These were awesome! Restaurant quality! I added 1/4 tsp. garlic powder and 1/2 tsp. oregano to the marinade. I marinated the vegetables in a seperate bag. Used ff sour cream, colby jack cheese (fine shred), and salsa as toppings. - 10/8/08
