Herbed Chicken

Ingredients
1/2 C extra virgin olive oil1 lemon, thinly sliced3 cloves garlic, finely chopped2 T finely chopped basil3 T herbs de provence ( a blend of rosemary, marjoram, basil, bay leaf, lavender, and thyme.)3 boneless, skinless chicken breasts
Directions
In a large plastic bag, combine all ingredients. Close the bag, and using your hands, rub the marinade all over the chicken breasts. Allow to refrigerate at least 1 hour, up to overnight.

When ready to cook, preheat your oven to 425 degrees. Place the chicken breasts in to an 8"X8" pyrex pan and pour the marinade over the top. Roast for 15 minutes or until done, and serve with fresh lemon slices for garnish.
