Vidalia Onion Pie

4 tbsp of unsalted butter, melted1 cup of saltine crackers, crushed1 tbsp of butter, melted2 large sweet onions, sliced into rounds1 cup of 2% or low-fat milk3 large eggs1/4 cup of shredded cheddar cheese1/4 tsp of paprika1/4 tsp of black pepper
Combine the 4 tbsp of butter and saltine crackers. Blend until moist. Using a fork, press into a pie pan.
Melt remaining 1 tbsp of butter in a large frying pan. Saute onions in the butter until the onions are translucent.
Meanwhile, mix together the milk, eggs and spices in a small bowl.
Place the cooked onions in the prepared pie pan. Pour milk and egg mixture on top of the onions. Sprinkle the cheddar cheese on top and bake at 400 degrees for a half hour. Pie is done when a knife inserted into the middle comes out clean.
