3 cups all-purpose flour 2 1/4 teaspoons ground cinnamon 1 1/4 teaspoons salt 1 teaspoon baking soda 1/4 teaspoon baking powder 1/4 teaspoon ground nutmeg 3 eggs 2 cups sugar 1 cup vegetable oil 1 tablespoon vanilla extract 2 cups shredded zucchini
Mix dry ingredients (minus the sugar) and set aside. Lightly beat eggs and stir in sugar and vanilla. Add dry ingredients. Batter will be very stiff. Fold in Zucchini and moisture from the zucchini will decrease batter stiffness. Pour into 2 greased loaf pans and bake at 350 for 50-60 mins.
