JC's Crab Cakes

Ingredients
2 cans of Lump Crab Meat 1/2 Cup Progresso Bread Crumbs1 Med Egg, beaten2 slices of red pepper chopped1/2 T of Cilantro (find the paste in vege area)1 green onion chopped fine4 T of Light Mayo
Directions
Drain crab set aside- I prefer the Phillips Crab in Seafood area-
Put the bread crumbs, red pepper, cilantro, green onion, beaten egg and mayo and mix gently together.
It should feel wet and packable, but not soupy- If not wet enough add 1 more egg white.

Add Crab gently with hands, so you do not break lumps.

Form patties- this recipe as stands should make 8 sm-med patties,

Warm skillet, med high and PAM it-

6 min a side.

Serve with SPICY mustard or Dijonaise to keep it low cal.
