Banana Muffins

Ingredients
1 egg3/4 cup milk1/2 cup vegetable oil2 cups all-purpose or whole-wheat flour1/3 cup sugar3 tsp baking powder1 tsp saltoptional 1/2 cup to 3/4 cup chocolate chips
Directions
Heat oven to 400*. Grease bottoms only of about 12 medium muffin cups. Beat egg; stir in milk and oil. Stir in remaining ingredients all at once just until flour is moitened (batter will be lumpy). Fill muffin cups about 3/4 full. Bake until golden brown, about 20 minutes. Immediately remove from pan.

Makes about 1 dozen muffins.

*If using self-rising flour, omit baking powder and salt.
