6 Tbls Olive Oil4 Tbls Lemon Juice3 cloves of Garlic minced1 tsp Salt1 tsp black Pepper1 tsp Chili powder2 Tbls Parsley, dried1 lb Asparagus, fresh cut into 2' sections1 Red Pepper, cut into strips1 Yellow Peppers cut into strips, 1 Green pepper, cut into strips8 oz Mushrooms, in chunks
Cut up veggies and put in a large bowl.
Mix the Sauce ingrediants and whisk.
line a 8 x 11" pan with foil
dump the sauce mix on top of the veggies
mix well
dump into lined pan and bake at 450 degrees for 15 minutes.
