Spinach and egg pie

1 leek, sliced in half lengthwise and chopped6 oz baby spinach2 whole eggs6 egg whites1/2 red bell pepper, chopped
1. Preheat oven to 350 and coat a 9-inch pie pan with nonstick spray.
2. spray a large skillet with nonstick spray and place over med high heat. add leek and spinach and cook tossing frequently, untill spinach has wilted.
3. in a med. bowl beat eggs and egg whites. add spinach mixture and peppers to eggs and stir.
4. pour into pie pan and bake for 45 min. or until eggs are set.
