Ingredients
1-1/2 pound (680 grams) fresh green beansSix medium tomatoes (about 26 ounces or 740 grams)1/3 cup olive oil3 tbsp balsamic vinegar4 cloves garlic1 tbsp Italian seasoning
Directions
Slice the ends off the beans, cut them in half, and then steam them about 6-8 minutes until crisp-tender. Cut up the tomatoes into bite-size pieces, saving the juice. Whisk together the olive oil, vinegar, and garlic. Mix the steamed beans and tomatoes, sprinkle the Italian seasoning over them, and then pour the oil mixture over the vegetables. Toss to coat. Makes twelve servings of 10, 4" green beans and 1/2 of a tomato each.

    I halved this recipe, used ACV instead of Balsamic, and then tossed it all into a pan and heated it over medium for 5-8 minutes. Very tasty. - 9/2/09
