Choco-nana Pancake

Ingredients
2 eggs - beaten until bubbly1 ripe banana - well mashedmix egg and banana1/4 cup milk and beat until bubbly1/4 cup orange juice beat until bubbly1 cup Bisquick Pancake mix (adjust quantity of mix and liquid as need to get desired consistency)Mix wellAdd 1 cup chocolate chips
Directions
Heat griddle - best on heavy cast iron griddle - Temperature will vary with type of cooking surface, altitude and stove)
Med - High to start and then lower temp
Oil griddle ( I like Peanut or Almond oil)
Wipe off excess oil
Spoon on pancake mixture - try to evenly disburse chips
When bubbles appear on pancake surface and bottom is brown, turn pancake.
Cook time varies
Best served directly from griddle. Serve with favorte topping or can be served without topping

    This was a big hit with my family. The banana was just right and not overpowering. What I liked best was being full after eating 1 pancake. I served it with chocolate syrup instead of pancake syrup and a little bit (a very little bit) of real whipped cream. A little splurge that isn't too bad. - 2/20/10
