Curried Chicken Salad Wrap

Ingredients
1 Tbsp OLIVE OIL1/4 C Diced ONION1 Tbsp CURRY POWDER1/4 C Diced APRICOTS1/4 C RAISINS1 C YOGURT1/4 C Chopped ALMONDS1 1/2 Pounds cooked CHICKEN2/3 C COUSCOUS1 C WATER2 C SPINACH8 TORTILLAS 8"
Directions
Shred or chop cooked chicken. Saute onions in olive oil until translucent. Stir in curry powder. Remove from heat and add apricots, raisins, yogurt and almonds. Stir until mixed. Add chicken and stir until coated with mixture.

Cook 2/3 cups couscous in 1 cup water as directed. (I choose to omit salt and butter.)

Stuff tortillas with a 1/4 cup couscous, 1/2 cup curried chicken salad, and 1/4 cup fresh spinach.
