3.5 cup whole tomatoes (1- 28 oz can, undrained), pureed1 cup tomato sauce (1- 8 oz can)1 cup water1 medium onion, chopped2 garlic cloves, minced1 tbsp olive oil1.5 tbsp parsely1 dash salt1 dash pepper3.5 cups red kidney beans (2- 15.5 oz cans), drained and rinsed
Lightly brown onion and garlic in olive oil. Add pureed tomatoes, tomato sauce, and water (can add more or less water to make more or less "soupy"). Add parsely, salt, and pepper. Cover and cook 1 hour. Then, add drained and rinsed kidney beans. Uncover and cook 30 minutes more. Serve over Ditalini pasta with parmesan cheese.
