11/2 cup whole wheat flour1/4 cup wheat germ1/2 cup naturla granulated sugar11/2 tsp baking powder1/2 tsp baking soda1 tsp cinnamon3/4 cup low fat vanilla yogurt2 tbsp light vegetable oil1 cup firmly packed grated zucchini1/2 cup sultana raisins1/4 cup chopped walnuts (optional)
Preheat oven to 350 degrees F; combine first 6 (dry) ingredients in a bow;. Make a well in the centre of dry ingredients and pour in Yogurt and oil. Stir together until smoothly combined. Stir in Zucchini, raisins and nuts (if using). Divide batter between 12 muffin tins and bake for 20-25 minutes until tops are golden and knife inserted in centre tests clean. Makes 12 servings.
