Chicken Tender Parmagiana

Ingredients
3/4lb chicken breast tenders1/4 cup Progresso bread crumbs1/4 cup all-purpose flour1 Large egg lightly beaten2 tbsp evoo1/2 cup mozzarella cheese (preferably smoked) & Parmesan cheese, shredded1 cup Tomato SaucePreheat oven to 350. Dredge the tender in flour, then egg, then bread crumbs. Heat oil in a skillet until shining but not smoking. Add chicken. Cook until golden on both sides. Remove chicken from pan & place in baking dish. Pour sauce over chicken & then add the cheese. Bake for 15 min. Serve over pasta.
Directions
3/4 lbs of chicken tenders came to about 7 tenders in a package. So this is about 3.5 servings at 2 tenders each serving.

    My family enjoyed it. It was quite tasty. I used 1.18 lbs of chicken for the flour, egg, and bread crumbs since I didn't want to waste the ingredients. I did find I needed a little more olive oil since my pan wasn't big enough to hold all of the chicken at once. - 1/1/10
