Lemon Bread

Ingredients
1 3/4 cups all-purpose flour3/4 cup white sugar2 tsp baking powder1/4 tsp salt2 egg whites1 cup nonfat milk1/4 cup unsweetened applesauce2 TBSP finely shredded lemon peel1 TBSP lemon juice1/2 cup slivered almonds or walnuts
Directions
Preheat oven to 350 degrees. Lightly spray an 8 by 4 by 2-inch loaf pan. In a medium bowl combine flour, sugar, baking powder, and salt. Make a well in the center of flour mixture and set aside.

In another medium mixing bowl combine the egg whites, milk, applesauce, lemon peel, and lemon juice. Add egg mixture all at once to flour mixture. Stir just until moistened...batter should be quite lumpy. Spoon batter into prepared pan. Sprinkle almonds or walnuts evenly over batter.

Bake for 50-55 minutes or until wooden toothpick inserted near center comes out clean.

Makes 1 load which is 16 slices :)

    This was ok. Next time I would double or even tripe the lemon and lemon peel as it wasn't lemony enough. I might even stir in 1/2 cup greek yogurt to make it a little richer tasting. - 3/9/14
