L.R. quinoa pilaf

Ingredients
1 cup finely chopped onion3 cloves garlic, minced1 tsp. oil3 cup quinoa, rinsed4-1/2 cups chicken broth or bouillon3/4 cup chopped fresh parley
Directions
In a large kettle, saute the onion and garlic in the oil. Add broth and bring to a boil. Add rinsed quinoa. Bring back to a boil. Reduce heat and simmer for about 20 minutes or until dry. Stir in parsley. Makes about 9 cups.
