11/2 cups all purpose flour11/2 cups Quaker Oats (quicker or old fashioned,uncooked)1/2 cup sugar (baking with splenda )2 cup fresh orange juice1/4 cup oil (vegetable)1 egg,lightly beaten1 cup cranraisins1/2 cup chopped nuts ( pecan or walnut )1 tablespoon baking powderHeat oven to 400F. Spray medium muffin pan with cooking spray.In small bowl mix egg, orange juice and oil, set aside.In large bowl mix all dry ingredients,now add wet to dry, mix until dry ir moistened (might need to add a little more orange juice).Fill muffin pan 3/4 full. Bake 18 to 20 minutes or until golden brown.Let stand a few minutes; remove from pan.Makes 1 dozen
