Protein Packed Sweet Berry Blast Omelette

30g Protein Powder (I find tastes best with Strawberry or Vanilla flavour but any will do)1 Medium egg150ml of Liquid Egg White or 4 separated egg whites from whole eggs50g Blueberries50g Raspberries (or substitute for Blackberries etc)20ml of Skimmed or Fat Free Milk5g Dried Goji Berries (Optional)8g Flax Seed (Optional)Sprinkle of Ground Cinnamon (Optional)
Makes one hearty omelette...
* Whisk together the Egg, Egg White, Protein Powder, Milk, Flax and Goji Berries
* Pour mixture into a small frying pan (preferably spraying with one cal)
* Randomly add the Blueberries and Raspberries, dunking them under the mixture
* Cook on a low heat until mixture is almost set before placing under a medium grill until firm and lightly browned
* Remove from frying pan and sprinkle with ground cinnamon
And that's it... Simples!!! :-)
By choice, you may wish to turn the omelette over and cook the topside over the hob is you feel the centre is still quite soft.
