2 cans refried beans1 sm can whole kernel corn1 can black beans1 small can rotel original5 cups of shredded fiesta blend cheese36 oz ground beef - fried1 small onion, chopped1 packet of mild taco seasoning
makes 30 servings approx. of 7.5 oz or 211g
Brown ground beef and add 1 packet of mild taco seasoning, and chopped onion. Cook until thoroughly browned and seasoning is well mixed.
Add all other ingredients except cheese and tortillas
simmer until thoroughly heated.
Line 9 x 13 pan with corn tortilla layer,
add a layer of meat mixture, then a layer of shredded cheese
repeat 2 more times, ending with a cheese layer on top.
Bake at 375 for 30-40 minutes or until it has a nice brown top.
Serve hot , with lettuce,tomato, and sour cream, (and tortilla chips) if desired.
