Crawfish Etoufee

Ingredients
1-1/2 sticks butterapprox 1/2 c flour1/2 green pepper, chopped1 medium onion, chopped3 large cloves garlic2-3 tsp creole seasoning2 tsp dried parsley2 cups water1 lb parboiled crawfish tail meat (may substitue shrimp)
Directions
Melt butter. Slowly add flour until smooth. Add vegetables and cook until soft. Add water, seasonings, and crawfish. Cook until heated through. (May need to adjust water and/or flour content until reaches desired stew consistency.)Serve over rice. Makes 8 servings.
