1 Box Whole Wheat Rotini1 Tbsp. Olive Oil1 small yellow onion1 Tbsp. minced garlic2 small green peppers cut into strips1 C. broccoli florettes2 medium yellow squashes thinly sliced1 large Zucchini thinly sliced1/3 C. Kraft Parmesan cheese1/2 C. Chicken stock or broth1 Tbsp. Oregano2 tsp. BasilSalt, Pepper, and Red Pepper flakes to taste
Begin by boiling your pasta according to the directions on the box. While pasta is cooking, heat oil and saute garlic, onion, and green pepper. Add Broccoli and thinly sliced zucchini and squash adding occasional splashes of chicken broth to keep the food from burning. This will also help steam your food so you need less oil! During this time, you should add your salt, pepper, oregano, and basil. Once all the veggies are fork tender, add remaining broth if there is any and mix in your pasta and Parmesan cheese till everything is incorporated. Enjoy! Adjust the seasonings to your own taste and add red pepper flakes for a little kick!
