Marinated beets with mint

Ingredients
Roast 8 medium sized beets wrapped in tin foil for 45-50 mins in a 400 degree oven. Rinse under cold water and slip off skins. Cut in half lengthwise, then thinly slice into half moons. Add all remaining ingredients except for feta. Serve topped with crumbled feta and mint sprigs.
