Chicken Soup with Cornmeal Sage Dumplings

SOUP1 Tbs olive oil1 lb chicken breasts, cut into bit-size pieces1 cup chopped carrots1 cup chopped celery1 chopped red onion2 cloves minced garlic8 cups chicken broththymeblack peppersaltDUMPLINGS2/3 cup flour1/3 cup cornmeal1 tsp sagesalt black pepper1/2 cup buttermilk
Saute carrots, celery, onion and garlic to hot oil for 2 minutes. Add chicken and continue cooking until chicken is golden brown. Add thyme and toss to coat, then add broth and season with salt and pepper. Heat.
Mix dry ingredients for dumplings and then add buttermilk, stirring until mixed Use a spoon to drop 8 dumplings into the broth. Cover pot and let cook for 5 minutes until dumplings are puffy and cooked through.
