Peach-Apple Spread

24 ounces water6 packets Truvia8 tart apples, peeled, cored, and chopped10 cups chopped, pitted, and peeled, peaches1 tsp grated lemon zest4 tbsp fresh squeezed lemon juice1 tsp ground nutmeg1 tsp ground cinnamon1 tbsp freshly grated ginger4 packages no-sugar needed fruit pectin
Combine all ingredients EXCEPT the pectin. Bring to boil over medium high heat, stirring frequently. Reduce heat and boil lightly while stirring constantly and mashing fruit pieces as they soften.
Once mixture is completely cooked through and all fruit pieces or most of them are mashed, bring mixture to a rolling boil that does not stop or slow when stirred.
Stir in one packet of fruit pectin at a time.
Do a gel test before you can this mixture. Can in a water bath canner for 10 minutes or use a pressure cooker. Follow all instructions as indicated on the canning equipment that you choose to use.
Yields a little over 14 half-pint jars. This will get you about 230 tablespoon servings.
