Ingredients
Directions
14 cups (or about 5 pounds) blueberries3 limes (use both the zest and the juice)8 packets Truvia4 tsp cinnamon2 packages no-sugar needed fruit pectin
Wash the berries and crush in a large saucepan. I crush them with my hands. It is easiest. Stir in the grated lime zest, lime juice, Truvia, and cinnamon.
Bring to a rolling boil that neither slows nor stops when stirred. Quickly whisk or stir in pectin. Hard boil mixture for one minute. Complete a gel test. If it passes the gel test, can in a water bath canner for 10 minutes.
This batch yields approximately five pints plus 1/4 cup. Each serving is one tablespoon.
