Fat Free Zucchini Brownies

1/2 C Applesauce1 1/2 C white sugar2 t vanilla extract2 C all purpose flour1/2 C unsweetened cocoa powder1 1/2 t baking soda1 t salt2 C shredded zucchini1/2 C chopped walnuts (optional, not included in nutritional analysis)
Preheat oven to 350 degrees. Spray a 9 x 13 pan with nonstick spray.
In a large bowl, mix together the applesauce, sugar, and vanilla until blended. In another bowl, combine the flour, cocoa, baking soda and salt. Stir the dry ingredients into the wet ingredients. Fold in the zucchini and nuts, if using. Batter will appear dry, but will moisten with the zucchini.
Spread ino the prepared pan.
Bake for 25-30 minutes, until brownies spring back, and tester comes out dry.
Sprinkle with powdered sugar just before serving if desired.
Makes 40 small (1 1/2 inch) brownies.

I made this recipe and everyone seems to love it. The only issue I have is with the portion size. 40 pieces from a 9x13 is very very tiny. I had to put the recipe in again and recalculate for 24 pieces and it still came out to just under 100 (96 cal). So you can have bigger still under 100. - 6/10/10

I was unsure about them,but very surprised when I ate them...it's more like a dense cake then a brownie...I also used 1 c splenda and 1/2 c sugar because I ran out of sugar...that was a mistake... it leaves a sweet splenda taste in your mouth..next time using all sugar or less splenda! - 6/2/10

Yum! The family keeps asking for these. Used Splenda an egg, some walnuts and drizzled honey on top. The batter was pretty dry so I added just a little water.
Made these again with only 1c flour and still added an egg. This makes them very moist where the orig. is more dense. I like them both way - 11/13/09

made these last night as per recipe (which I almost never do), only adding some turbonado sugar over the top before baking. WOW these are good!!! I had an old recipe for zucchini brownies but am so glad I tried this no-fat version. I did cut into 24 pieces rather than 40 - can't imagine that small.. - 8/3/11

I made it exactly like the recipe, no changes. Very good brownies! My neighbors, kids, husband, father ... everyone loved them. My 4yo did say it "tasted" more like cake or bread than a brownie. But that was just due to texture. I have people asking for the recipe. Thanks for sharing! - 7/16/11
