Zucchini & Onions

Ingredients

2 tbsp Extra Virgin Olive Oil1 large onion3 large zucchinis (about 14 cups)1 Tbsp Italian Seasoning1 tsp seasoned salt
Heat olive oil in large pot.
Cut up onion and add to pot.
Salt the onions.
Cut zucchini into slices about 3/8 to 1/2 inch thick, then quarter the slices.
Add zucchini to pot.
Sprinkle the Italian Seasoning over the zucchini.
Cover and cook over medium heat until zucchini is cooked through, (about 30 minutes), stirring occasionally.
Yields about 9 - 1 cup servings.
