cooking spray or olive oil1/2 cup chopped onion1/2 cup green bell pepper3 egg whites or egg beaters2 slices of American cheese (or low fat sub)2 whole wheat tortillas
Add olive oil or cooking spray to pan
Add onions and peppers and cook until desired tenderness
Add egg whites and cook through
Place a whole wheat tortilla on a plate with cheese.
Add egg mixture and roll up. Repeat for other tortilla.
