Pesto Sauce1 cup fresh basil leaves3 tbsp. extra virgin olive oilHandful of pinenuts4-6 cloves of garlic1 lb. of Chicken breast, no skin1 tomato sliced thinly8 oz. skim milk mozzarella cheese
Preheat oven to 375 degrees. Prepare pesto sauce by combing basil, pinenuts, and extra virgin olive oil in food processor/blender. Next, place 1-2 tablespoons of pesto on bottom of a non-stick pan. Next place chicken breasts on top of the pesto mixture. Next spoon the rest of the pesto mixture over the chicken. Cook for 40-45 minutes. Then, take the sliced tomato and place it on the chicken. Sprinkle all chicken with the mozzarella cheese and cook for approximately 10 minutes. Serve hot. Makes enough for 4 servings.
