steak Au poivre

Ingredients
4 ten oz filet mignoncrushed peppercorns1 cup congac4 strips applewood smoked bacon4 tsp dijon mustard1/4 cup heavy cream2 tbsp olive oil
Directions
wrap filets with applewood bacon and skewer in place. liberally coat top and bottom of filet with pepper in a hot pan coat bottom with olive oil and sear filet top and bottom then cook to med. Remove steaks and set aside, deglase pan with cognac and heat till alcohol cooked out (i like to flame which will go out once alcohol is gone) add dijon mustard and stir with wisk then add heavy cream and reduce till thick. Plate steaks and spoon sauce over the tops of the steaks.
