Blueberry Muffins (Joy of Cooking Cookbook)

Ingredients
1 3/4 cup sifted flour1/3 cup sugar2 tsp baking powder3/4 tsp salt2 eggs, beaten3/4 cup milk1/4 cup oil1 cup blueberries
Directions
1) Pre-sift flour. Then measure 1 3/4 cups of the flour and re-sift with salt, sugar and baking powder.

2) In small bowl, beat 2 eggs and then mix in milk and oil.

3) Fold the wet ingrediants and blue berries into dry ingredients. Stir no more than 15-20 strokes! (Overmixing will ruin muffin)

4) Spoon into 6 well-greased muffin tins.

5) Bake in a 400 pre-heated oven for 25 minutes or until golden on top.

    I love this recipe! I use butter instead of the oil, and I add a bit of extra milk + some bran! I get 12 HUGE muffins out of this, so I'm counting each 'serving' as 2 muffins for my own tracking. - 1/24/12
